No waste raw carrot cake

It’s that time of the year again where the bikini is back under the bed, and the cozy cake season is on!

But we are some people who still wants to eat the good stuff with good consciousness, and not feeling like we did something really wrong after that cake or getting a sucker rush!

Here is a recipe for the win. Every time you make yourself some juice you just take the pulp and storage in a sealed bag, and put in the freezer until you want to use it. The pulp can both be used for burger patties, protein balls or cake. Simply no waste

 

Raw carrot cake made from pulp:

Frosting cream.

250g soaked cashews ( for activating and softness)

1 spoon raw vanilla

1 spoon agave

 

Filling.

500 g carrot pulp (from your juicemachine)

2 small spoons of cinnamon

1 spoon of nutmeg

5 dates

100 g coconut flower

 

Combine everything for the filling in the blender and set aside in the fridge while you make the filling.

Combine all the filling ingrediens in a foodprocesser and.

start building your cake in different layers in the form you wish.

Put aside again in the fridge for 30 min.

Serve it with melted vegan chocolate on top and flowers.

Tip. Try to stay as organic as possible, especially when it is raw.
